ネットや本に掲載されているタレだと焼き鳥に絡まないんだが、鶏皮を使って作ると焼き鳥屋で食べるあのタレと同じ味になる。
これは鳥の脂とタレが鶏皮のゼラチン質を介してエマルジョン効果を起こすからなんだが、焼き鳥に絡みやすくなり、かつ鳥の脂がタレとマヨネーズのように中和して、 舌に触れたときに焼き鳥の風味が爆発するのでおすすめする。
材料
鶏皮100ｇぐらい ←長く使われたタレには焼き鳥の風味が染み込んでるから
長ネギ 白いところ20ｃｍぐらい ←長く使われたタレにはネギマの風味が染み込んでるから
醤油 200cc ←なんだかんだでキッコーマンかヤマサがオススメ
みりん 100cc ←みりんの風味がタレの甘みに深みを増す
ざらめ 大さじ3 ←ザラメの砂糖には白砂糖にない風味があるので、タレに深みがます
おろしニンニク 小さじ１ ←鳥の臭みを消すためだけど、多すぎると焼肉のタレっぽくなるので加減しながら
ハイミー 小さじ１ ←ハイミーの成分は長年熟成させた焼き鳥のタレと同じ成分が入ってる
鶏がらスープの元かブイヨンやコンソメ 小さじ1 ←プロの焼き鳥屋のタレには秘伝のダシがはいってるんだけど、こういう業務用スープのもとに大抵含まれてる。
1.鶏皮とネギを細かく刻む
2.材料を全部鍋にぶち込んで煮込む
3.弱火で30分ぐらい煮こむ
4.網でこしながらタレを器にうつす
5.ゼラチン質と油が混ざるように練りながら冷やす。
6.タレが白濁してブラウンぽくなったらできあがり

味噌 ←大さじ１ ←これいれるとタレの味が濃厚になり風味が増す
もう少しドロッとさせたい時は粉ゼラチンを追加して煮立てる ← ポン酢ジュレにもつかわれている
りんごとかバナナとかナッツとか←隠し味にいいんだけど、やりすぎると甘みがましすぎる
